Homemade Mayo

Serving: Makes 1 cup

Ingredients

  • 1 large egg, at room temp

  • 1 cup of light-tasting oil (I use Avocado)

  • Salt to taste

  • 1 tbsp lemon juice

  • 1/2 tablespoon Dijon Mustard

Directions

  1. Crack the egg into a 2-cup measuring cup and add 1/3 of the oil.

  2. Using an immersion blender, blend for 15-20 seconds until it's completely emulsified.

  3. Slowly add in the rest of the oil while using your other hand to continue blending.

  4. When all of the oil has been blended in, you should have what resembles a creamy mayo. Add in the salt, lemon juice, and dijon mustard, and blend for a few more seconds until fully combined.

Notes

  • To quickly bring an egg to room temp, submerge it in a bowl of warm water for 3-5 minutes.

  • If you would like a more flavorful mayo, you can add more dijon and lemon juice, roasted garlic cloves, and/or freshly cracked black pepper.
